Beth's Birthday Cheesecake (aka Chocolate Marble Cheesecake)

For the past several years I have made this cheesecake for my birthday. It is so yum yum good, that Baruch requested it for his birthday this year.

3 packages (8 ounces each) neuftechel cheese
3/4 C sucanat (or rapadura or unrefined sugar)
1 t vanilla
3 eggs
1 square unsweetened Chocolate, melted
1 Mrs. Smith's pie crust thawed and baked

Preheat oven to 450°

Beat neuftechel cheese, sugar and vanilla at medium speed with electric mixer until well blended. Add eggs, 1 at a time, mixing well after each addition.

Blend melted chocolate into 1 cup batter. Spoon plain and chocolate batters alternately over crust; cut through batters with knife several times for marble effect.

Bake 10 minutes. Reduce oven temperature to 350°F; continue baking 30 minutes. Cool and serve plain or with fruit. Refrigerate leftovers, but don't expect any =)

Canoeing on the Wapsipinicon River with Grandma and Pa.

We had a wonderful time! First we went up stream to an island then past our landing spot to an inlet down stream. Then back up to where the vans were parked. Everyone had a blast. It was really windy and I was completely worn out by the time we headed home though :)

We traveled to LWBC for Sarah and Robbie's wedding (tomorrow). We did some hiking, wading and swimming today.

To culminate the reception the couple lead praise music! He on guitar, She on piano!! It brought tears to my eyes to sing praises to God with everyone dear to each of them - extremely touching. It blessed me to be able to share their day with them.

Abram had been asking for a surprise party. Cob took Abram upstairs about a half hour before the guests were scheduled to arrive and kept him busy until everyone was in the living room and I called him down. He was thoroughly surprised and a little embarrassed. He had a great Fifth Birthday thanks to good friends coming over to help celebrate.
